Growing Sage Herb
Sage (herb) is a popular resident of the herb garden. Sage comes in different varieties and foliage colours. It is a shrubby plant with medium-sized grey-green leaves and attractive blue flowers in its most common form, and originates in the Mediterranean.
Sage (green form) has a number of uses as a herb, including flavouring food (e.g. sage stuffing), and as an antiseptic. It’s essential oils are very strong and should not be used in medicine except by the very experienced, and in any case should never be given to pregnant women.
Growing sage (herb) is easy. It thrives in chalky soil but will also do well in a good loam. As with most herbs, good drainage is important. Its latin name is Salvia officinalis.
Common sage (green) also comes in a number of foliage colours, including purple sage, variegated sage and golden sage.
There are also other species of sage (some 750 in all) a few of which have herbal uses. White sage was used by native Americans to burn and for purification. Pineapple sage (Salvia elegans) forms a large bush with red flowers and can be used to make an herbal tea. Scarlet sage (Salvia coccinea) is a hardy annual used in the flower garden and herb garden in the US as a decorative plant, though it has no herbal use that I am aware of.
In the herb garden green sage mixes well with thyme plants and marjoram which cannot overshadow it and so allow it plenty of air and light.
